Coconut Ice Cream Baskets

3 egg whites
396g (14 oz) sweetened coconut flakes
1 tbss flour
Pinch of salt
1/2 tsp vanilla Essence or almond essence
Ice cream of your choice
Chocolate or strawberry syrup
- Preheat oven at 180*C.
- Add egg whites and salt to a mixing bowl. Beat until fluffy and soft peaks form. Fold in sweetened coconut flakes and flour. Press dough into nonstick pan or silicon pan,on the bottom and up the sides in a thin layer.
- Bake for 20-25 minutes or until sides and tops turn golden brown. Bottom will remain white. Once done leave to cool slightly then remove from the tin carefully.
- Serve with ice cream and syrup on top. Voila, Bon Appetite 🙂
