Tomato Watermelon Juice

Makes 2 servings

This scrumptious drink will keep you wanting for more! Give yourself a treat in the scorching sun with a Tomato Watermelon Juice.

Ingredients:

Juice, ripe red tomatoes – 2, large
Watermelon – roughly cubed, maybe half a cup
Sugar – as per taste (my tomatoes were quite sour and I needed about 6 teaspoons)
Ice cubes

Method:

  1. Blanch the tomatoes for a minute in boiling water. Remove and place them in cold water. This should make the skins easy to remove.
  2. Cool the tomatoes and blend with ice cubes, sugar and watermelon cubes.
  3. Taste and see if it needs more sugar or watermelon. Don’t overdo the watermelon though, you just need a hint of their sweetness.
  4. Strain and serve cold.
